Trying to get a little more creative with The Day Wellness Restoration Plan this time!
This was so easy, just throwing everything together in the crockpot!
Easy Lamb Stew
6 carrots chopped
1 onion diced
8 asparagus chopped
5 celery stalks chopped
2 1/2 cups chicken stock (I used leftover stock from a chicken I made over the weekend so the flavor was fantastic)
about 2 lbs of lamb chop shoulder (I was in such a hurry to get it started I didn’t even cut it up, but if you have the time and desire feel free too!)
Salt and pepper to taste (the spice option for this are limitless, try whatever you like!)
This would take about 3 1/2 hours on high, and 8 hours on low. As soon as the meat fell off the bone I started eating. So delicious and tender.
